That is done quite often actually to study the brain and its functions.
What parts of the brain are affected in what way when exposed to certain stimuli is a major part of neuropsychology as well. Research about many things - for example the influence of violent video games - uses that method. It has brought some fascinating results and might offer some new answers and approaches to subjects like this.
