Speaking of my monthly visitor...
Does anyone have a good recipe for fresh homemade pasta sauce? I've got all these damn heirloom tomatoes coming in and I'm trying to decide what to do with them. Short of caprese salad. Ooh... with balsamic.
Crap I want that now. Pasta sauce? Anyone? Surprisingly I've never tried.

Pasta sauce isn't hard, just messy.
Saute some onions and whatever other vegetables you like (I put bell pepper) in olive oil until they are soft in the bottom of a good stainless pot. Peel and seed your tomatoes, dice them up roughly and add to the pot with a little salt. Add your dried herbs now. I use oregano and pepper that's about it since a lot of it will be frozen and stored. You can also add some red wine now if you like it. Cook down at a fast simmer until you get the consistency you want. An immersion blender helps here if you like it smooth (which I don't). Once it's where you want it, add your fresh herbs (I use basil) and adjust the salt. And there you have it. Good basic tomato sauce for pasta or whatever you want to use it for. Whatever you do, DON'T cook this in aluminum. You'll not only stain your pot but the sauce will taste funky. I make this by the gallon, freeze it in gladware, and eat off my "extra" tomatoes all winter.
