There's a major duck fly way over west Texas. Most of the elaborate duck recipes that I've tried consist of some exotic alcohol based sauces that you simmer the duck in for a very long time. Most of the time, I find it better to drink the sauce and throw away the duck.
A couple of decades ago, I tried cutting the duck breasts into 1/2" strips and cooking them in the same manner as liver and onions. Absolutely, superb!
Unfortunately, the only place around here to get trout is at a restaurant and they inevitably taste like thawed out dead fish.
